The ingredients needed to make Hummus:

  1. {Make ready of dry chick peas.
  2. {Prepare of garlic cloves.
  3. {Make ready of tahini.
  4. {Prepare of freshly squeezed lemon juice.
  5. {Take of extra virgin olive oil.
  6. {Get of cumin.
  7. {Make ready of Generous dash of salt and ground white pepper to taste.
  8. {Take of Paprika (or za’atar), extra virgin olive oil, parsley (optional) to serve.

Steps to make Hummus:

  1. Rinse chick peas until water is clear. Soak for at least 8 hours..
  2. Change water and boil for 2 hours until chick peas are tender and not crumbly. Save approx. 3/4 cup of cooking water and discard the rest. Add ice cubes to rapidly cool down the chick peas and cooking water..
  3. Drain chick peas and put in a food processor..
  4. Remove and discard germ from garlic, if present. Roughly chop garlic..
  5. Add to chick peas the garlic, tahini, oil, lemon juice, cumin, salt, white pepper and 1/2 cup of cooking water..
  6. Purée until smooth. Add more cooking water to reach the desired consistency..
  7. Transfer to a serving bowl. Sprinkle sweet paprika and drizzle more olive oil. Enjoy!.
